A function is when you put something in you get something unique out. Functions can be used to encrypt things to make them harder to understand for anyone who is not supposed to read it. It is important to know how they work because if you are on the receiving end of an encrypted message you need to no how to un-encrypt the message. You need to know this so you can understand what is being said.
